In simpler words, any Lookup Table provides a predetermined shortcut for specific computation, converting one set of values to another.
In the context of color grading, it is a coded equation that transforms the color values of camera footage to the desired final footage.
Applying a LUT changes the value of colors in a pixel into something more desirable.

A warm red color evokes a different feeling than cold deep blue. Even within the same color, a cold deep blue evokes a different feeling than bright vibrant blue.
